A new Flat Iron is opening in Spitalfields today (1 July), with a beef tasting event to celebrate its opening.
On 3 July, shortly after its opening, the founder Charlie Carroll and head of beef Fred Smith are inviting guests to join in the rigorous process of beef selection, followed by a weekly beef tasting club, where diners are given scorecards to grade their beef on tenderness, juiciness and beefiness.
Alongside this, founder Carroll has repurposed an old 1800s cast iron stove to create a hot toffee sauce used in his sticky toffee pudding.
Founder Carroll says: ‘‘Every Tuesday morning we have a beef tasting in our Covent Garden restaurant. Fred Smith, our head of beef, Calum our in-house master butcher and I score that week’s deliveries on tenderness, juiciness and flavor. We work with a wide network of small farmers and butchers (together with our own herd of cattle) to source the beef that is butchered on site at Covent Garden.”
